We source our ingredients locally and from Latin American farmers and cooperatives. Our ingredients are Fair Trade and Organic whenever possible. We exclusively use our full-inclusion flour, which we mill in-house daily.
Our offerings change regularly based on the grains and produce available to us. The menu and schedule below reflects our most common products and the times we usually have them out of the oven by.
Single origin, Fair Trade, Organic coffee. Locally roasted by our partners at Moka Origins. Medium Roast with notes of raisin and black tea.
Ethically sourced 100% Arabica bean coffee. Locally roasted by our partners at Moka Origins. Full body Dark Roast with notes of caramel and toasted nuts.
Black, Green, or Herbal tea from Equal Exchange.
Ethically sourced cacao. Made with single origin cinnamon and a hint of cayenne.
Traditional Oaxacan, flavored with anise and vanilla. Made by hand using full-inclusion, house milled flour. 80% Appalachian White Wheat from Grapewood Farm, Virginia; 20% Sonora Wheat from Ramona Farms, Arizona.

A super simple, classic chocolate chip cookie made from full-inclusion Black Emmer flour. The Black Emmer is from Wild Hive Farm, and the chocolate chips are Organic and ethically-sourced by Moka Origins.
Wild Hive Farm's Soft White Wheat. Almond, coffee, orange, Ceylon cinnamon, anise.
White Barley from Small Valley Milling. Orange, Walnut, Vanilla Sugar.
Rolled Oats from Gianforte Farm. Maple, coconut, sesame, and flax.
Unsweetened Skyr, Atla's Granola, local jam.
